Low Fat Juicer Pulp Muffin Recipe

I tried one of your muffin recipes it turned out pretty good. Do you have any suggestions on how I can cut out the 3 cups of oil and 3 eggs?
Can I use apple sauce to sub oil and just egg whites ?

And do you have a chocolate chocolate chip cookie recipe I can sneak some veggie pulp in where my fam or kids wont taste it?

A: Hi Dee! I understand you wanting to cut that oil and eggs out of the recipe. Years ago I was a strict vegan (and I still eat that way, most of the time), so heres a dairy and egg free carrot cupcake made with juicer pulp. Unfortunately, it does call for some oil. It's hard to not include any oil in a cupcake...but I will certainly experiment and post back when I find one.

Low Fat Carrot Cake Recipe (using some juicer pulp!)

1 3/4 cup flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1 1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
2/4 cup of apple sauce (could do half apple pulp)
2/4 cup of dairy free yogurt (soy, almond, vegan or regular if you prefer)
1 1/2 cup of sugar
1/2 cup of brown sugar
1 teaspoon of vanilla
1 cup of vegetable oil
2 tablespoons of orange juice
2 cups of grated carrots
1 cup of carrot pulp
3/4 teaspoon of salt

optional: 1/2 cup of walnuts or chocolate chips

Preheat oven to 375 degrees. In a bowl, mix together dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, salt.

In another bowl, mix the apple sauce and yogurt until well blended.

Slowly beat in the sugar, dark brown sugar, vanilla, oil and orange juice until all smooth.

Slowly mix in the flour until smooth.

Fold in the grated carrots, carrot pulp and optional walnuts or choco chips.

Fill 2 lined muffin tins 2/3 full and bake for 18-20 minutes, or until toothpick in center comes out clean.

Cool on a wire rack for about 15 mintues, and remove from the tins.

Experiment replacing the carrot pulp with apple or other pulp for a different variation. I also believe that substuting the 2 cups of grated carrots with another pulp could work, but I have never tried it.
