Health benefits of tomato juice
Tomato juice is high in lycopene and glutathione (powerful antioxidants) which reduce the risk of many cancers. Lycopene is also thought to help maintain mental and physical functioning and absorbed by the body easier when tomatoes are juiced. They also contain glutamic acid which is metabolized by the body into GABA(gamma-amino butyric acid), a calming agent known to be effective for kidney hypertension. Great to have after a stressful day to calm.
For juicing
The real stuff has a pinky/orange hue, and tastes like fresh tomatoes, not tomato paste!
Wash and discard stem. Use skin and seeds.
Juice them alone or use in other recipes
that contain tomato juice.
Juice yield
12 ounces (about 3 tomatoes) yields about one cup of juice.
Nutritional benefits of tomatoes
Rich in beta-carotene, biotin, folic acid, C, small amounts of B1, B2, B3, B5, B6. Rich in chlorine, calcium, magnesium, phosphorus, potassium, sodium, sulphur, small amounts of copper, iron and zinc.
