My drink of choice for the fall season is my special "fall edition" carrot cake juice. (nah...there's no cake, it just tastes like it : ). I don't think I ever gave it to you.
4 long carrots
2 tablespoons of coconut milk (or more if you'd like)
1 orange, peeled
1 three inch pineapple round, rind removed
Pinch of cinnamon
Dash of vanilla (optional)
After you've prepped the produce, Juice the carrots, orange and pineapple. Add the coconut milk, a few drops of vanilla and cinnamon. Stir to combine & serve.
If you want to add more coconut milk to this to make it more of a creamy shake, you can do that too. Alternatively, you could substitute the coconut milk with almond milk.
If you prefer to make this in your blender, it still tastes great. Add more liquid in the form of coconut milk, almond milk, coconut water or plain water to the blender with your ingredients. Blend until completely smooth.
In the picture above I added a little too much cinnamon (it looks like bubbles but it's really cinnamon) and it still tasted great.
It's SO tasty. I have a feeling you'll like this if you like sweet, decadent desserts (because it sure tastes like one!).
Serve it to everyone. And kids will sure love this too. It's also great for holiday parties and gatherings.
Carrots are great to incorporate into a healthy diet. They are high in calcium, beta carotene, folic acid and vitamin C. But this recipe also had the added benefits of pineapple, oranges and coconut milk.
Who says carrot cake isn't healthy? :)
