Carrot juice provides benefits such as antioxidant, anti-cancer, is artery-protecting, expectorant, antiseptic, diuretic, immune boosting, anti-bacterial, lowers blood cholesterol, and prevents constipation. Carrot juice is extremely nutritious, and rich in vitamins A, B and C among many others. They have a cleansing effect on the liver and digestive system, help counter the formation of kidney stones and relieve arthritis and gout.
Their antioxidant properties from carotenoids have been shown to cut cancer risk, protect arteries and heart disease, and lower cholesterol. These orange sticks enhance mental functioning and decrease the risk of cataracts and macular degeneration. In my opinion, if you’re juicing, you should shoot to get at least one in your juices a day!
For juicing
These vegetables have a sweet juice and the most versatile vegetable. They are ideal for mixing with all other more potent juices. They can be used in almost any juicing recipe. It is the only vegetable that can be mixed with any fruit without anti-social consequences. The deeper the color the higher the concentration in beta carotene.
Do not use the greens for juicing, as they are toxic.
They are hearty vegetable so you can wash them ahead of time with no problem. Cutting large sticks in half or into chunky strips usually helps with ease of juicing.

One pound, (about 6 medium) yields approximately 1 cup of juice.
