Salad Pulp Recipes

Salad pulp recipes or mixing pulp into salads can be tricky. I like to add in just a little with the dressing and toss….it’s barely noticeable in most recipes and adds a bit of flavor. These are the pulp recipes for salads that I use and find flavorful. You might find that you prefer another type of pulp then suggested for your recipes. Experiment and you’re bound to come up with a winner recipe!

Note: The best way to use pulp recipes in salads is to mix it in with a vinaigrette and blend until smooth. Using a Vita mix is even a good idea to get the consistency very smooth, especially if you are making a creamy dressing.

P.S.- You can even mix it into your store bought dressings!







Cucumber Salad Pulp Recipe



4 medium cucumbers, peeled and diced
8 ounces vanilla low-fat yogurt
8 ounces reduced-fat sour cream
1/2 cup diced onion
2 cloves garlic, minced
1 tablespoon dried dill weed
salt and pepper to taste
¼ cup of cucumber-apple pulp or other veggie pulp of choice.

In a serving dish, stir together the yogurt, sour cream, onion, pulp, garlic, and dill. Add cucumbers, and gently mix to coat. Season with salt and pepper. Refrigerate for a couple of hours before serving for best flavor.

Broccoli Salad Pulp Recipe



1 1/2 cups fresh broccoli florets
3/4 cup shredded Cheddar cheese
4 bacon strips, cooked and crumbled
1/4 cup finely chopped onion
3 tablespoons mayonnaise
2 tablespoons white vinegar
1 tablespoon sugar
1 cup of any vegetable pulp

In a bowl, combine the broccoli, cheese, bacon and onion. In another bowl, whisk the mayonnaise, vinegar and sugar. Pour over broccoli mixture, add pulp and toss to coat. Cover and refrigerate for at least 1 hour before serving.

Broccoli Bean Salad



1 pound fresh broccoli, chopped
1 (16 ounce) can kidney beans, rinsed and drained
2 large tomatoes, chopped
1 medium red onion, chopped
1 cup shredded cheddar cheese
1 (16 ounce) bottle Italian salad dressing
¼ cup of carrot or tomato pulp

In a large bowl, combine all ingredients. Drizzle with dressing; toss to coat.

Potato Salad Pulp Recipe



5 medium red potatoes
1/4 cup reduced-fat mayonnaise
1 tablespoon grated Parmesan cheese
1 green onion, sliced
2 teaspoons cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
¼ cup of chopped celery
¼ cup of any veggie pulp of choice, carrot, tomato, etc.

Place potatoes in a large saucepan and cover with warm. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until tender.
In a large bowl, combine the remaining ingredients. Drain potatoes and cut into cubes; add to the mayonnaise mixture and gently toss to coat. Serve immediately.

Everyday Salad



3/4 cup olive oil
1/4 cup fresh lemon juice
¼ cup of tomato pulp
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
2 heads romaine lettuce - rinsed, dried, and torn/cut into bite-size pieces
2 cups chopped tomatoes
1 cup shredded cheese (cheddar, swiss)
1/2 cup grated Parmesan cheese
8 bacon strips, cooked and crumbled (optional) 1 cup Caesar salad croutons

In a jar with tight-fitting lid, combine oil, lemon juice, garlic, tomato pulp, salt and pepper; cover and shake well. Chill. In a bowl, toss romaine, tomatoes, cheese, Parmesan cheese and bacon. Shake dressing; pour over salad and toss. Add croutons and serve immediately.

Salad dressings



Yummy Yogurt Dip and Salad Dressing



1 cup of yogurt
¼ cup of tahini
2-3 tablespoons of braggs aminos
1 tablespoon of parsley
1 tablespoon of dill
a pinch of cayenee pepper
a dash of hot sauce
3 tablespoons of carrot and tomato pulp

Combine all ingredients in a bowl and mix until blended. Pour over your salad of choice. Could work well for a cool cucumber or fresh green salad.

Pulp Vinaigrette



1 cup of olive oil
1 cup of lemon juice
2 tablespoons of apple cider vinegar
2 tablespoons of tomato pulp
salt and pepper to taste

Mix in a Vitamix or blender until smooth. Pour over any salad dish.
